Each day will feature a special bottle from some of their favorite producers, each showcasing a different region, growing style, or winemaker journey. This is your chance to savor some truly rare and delicious selections, all available by the glass and by the bottle. All of the wines will also be clearly marked and available for purchase so that you can take your favorite bottles home with you. *Note Friends & Family is closed on Tuesday and Wednesday.

WEEKLONG: TASTE OF MAINE TERROIR @ CELLARDOOR WINERY Portland
DETAILS: Join Cellardoor Winery for "A Taste of Maine Terroir" in their Portland tasting room during Portland Wine Week. Sample the preset flight and experience Maine-grown and crafted wines. For nearly twenty years, the Cellardoor team, spearheaded by Winemakers Aaron and CC Peet, has pioneered the cultivation of cold-hardy grape varieties for Maine's distinctive maritime climate. The challenge of growing grapes in Maine is also what makes Cellardoor's vineyard unique. They believe the spirit of meeting those challenges, and the unique environment and climate of Maine, is present in every sip.
Cellardoor Winery's winemaking facility and vineyard is located in Lincolnville, Maine. Each wine is made using fruit from their Estate Vineyard and from premier appellations in Washington, California, and New York states. From the 5.5 acre estate vineyard, Cellardoor grows Marquette, Frontenac blanc, and Frontenac gris grapes, developed by the University of Minnesota viticulture programs in the 1980s and 1990s; as well as L'Acadie blanc grapes, developed in Ontario, Canada in the 1950s.

DETAILS: Chef Ryan Hickman will be preparing a Pan Roasted Duck Breast with Farro, Fava Beans and Rhubarb. Owner Kate Hickman will be pouring glasses of 2020 The Vice House Pinot Noir from Napa Valley, California and bottles of 2022 Clementine Carter Grenache from Sta. Rita Hills, California. Seating available both indoors & outdoors, weather permitting.
WINE DETAILS: The Vice Wine is a Napa Valley luxury wine brand made in small batches. Each batch is crafted from single grape varietals sourced from hand selected vineyards that best express the grape varietal and the region that it comes from. The Vice Wine is a result of passionate labor, sustainable farming, a long expertise of the wine industry and a current understanding of the consumer’s wine trend. The Vice Wine is about as personal of a brand as it gets. Everything is done entirely by the founders.
Rhône varietals grown in Santa Barbara Wine Country are the focus of Clementine Carter, particularly Grenache and my new love Mourvèdre. Grenache is a crazy challenging grape to farm. Big clusters, big berries, thick skins. Farming Grenache is all about nuance. Finding the right zone with the correct balance to elevate the sexy, elegant, finessed tingles beautiful wine can impart. I have had the privilege of working with almost every Grenache vineyard in Santa Barbara County searching for the ones that resonate with me and my goals - to deliver a pure wine experience with pure intention.

Chef/Owner Ryan Hickman | Like many aspiring chefs Ryan started his career as a young dishwasher before soon being summoned to the line. Ryan worked as a line cook at restaurants throughout New England before moving to Portland to train under Chef Larry Matthews Jr. of Back Bay Grill, eventually becoming the Sous Chef. Ryan learned the importance of scratch cooking and quality local ingredients, two pillars that became the backbone of his cooking style. In the years following Chef Ryan ventured to California to explore the growing farm to table movement, eventually settling in Lake Tahoe. Two years later Ryan found his way back east to Arrow’s restaurant in Ogunquit with Chef ’s Mark Gair and Clark Fraiser. In 2014 Chef Ryan helped open and helm the kitchen at Pine Point Grill in Scarborough, bringing seasonal menus and culinary expertise to an area not known for its dining. When the restaurant sold in 2019, Chef Ryan ventured out on his own.
In 2020 Chef Ryan opened the doors to The Knotted Apron with his loving fiancé and co-owner Kate Harvey. His passion for simple, well executed and seasonal food is fully expressed in his first role as Chef-Owner where he continues to make his dreams come true one plate at a time.
General Manager/Owner Kate Hickman | Kate Hickman is the Co-Owner & Manager of The Knotted Apron, and very begrudgingly allowed herself an ‘about me’. Kate attributes her love of restaurants to her Grammy Edna, a waitress at Boston’s famed Copley Plaza Hotel. Edna was one of the first women to work as part of the wait staff in the illustrious oval room, a position normally reserved for men, during WWII. Grammy Edna diligently taught Kate how to polish silverware, take orders and set the table. From a young age dinners at home was treated like an occasion, with Kate taking orders and even making drinks!
Kate officially entered the industry at 16, serving as a bus girl at The Rosa in Portsmouth, NH. By 18 Kate had started serving and bartending, the beginning of an extensive career that covered every role in the restaurant world that doesn’t involve cooking food. Kate moved to Portland in 2017 where she started a career with Prentice Hospitality working at Evo Old Port and the Chebeague Island Inn. With decades of industry experience under her belt, Kate made a lifelong dream of having her own restaurant come true.

A native Maryland crab, Shef studied at L’Academie de Cuisine and promptly decided to pursue a culinary career in New York City as a proud member of the LGBTQ+ community. As the Creative Director, and later Executive Chef, at Vinateria she received a Michelin recommendation, participated in multiple chef collaborations such as New York City Food & Wine Festival, Harlem Eat Up and a gamut of James Beard Foundation dinners headlining and selling out one of her very own.

Sommelier Jenn Forge | Born and raised in Portland, Maine, Jenn is a veteran of the city’s restaurant scene, gaining experience in every front of the house position over the last 17 years. A local favorite bartender, Jenn’s love of wine began while working at Munjoy Hill’s highly regarded Lolita and at ViA VECCHiA, before she joined the opening team at Twelve in 2022. Jenn has a degree in hospitality management, and she is a certified Sommelier through the Court of Master Sommeliers, which recently accepted her application to participate in the Advanced Sommelier Course. She has also completed the WSET Advanced Level 3 course and feels that exploring both paths has been beneficial to her wine education. “First and foremost, I’m grateful to work in a restaurant where I’m surrounded by so many talented people — it’s nothing short of inspiring. I want the wine list at Twelve to be both approachable and impressive to cater to Portland’s diverse demographic. I am committed to serving every guest a delicious bottle (or glass) of wine, regardless of price point, with unparalleled hospitality."
Chef Colin Wyatt | After twelve years working in New York’s DANIEL and Eleven Madison Park, where he led the team awarded the accolade of “The World’s Best Restaurant” in 2017, Chef Wyatt recently returned to Maine to open the doors of Twelve. A veteran Portland chef, the natural beauty, vibrant culture, and passion of Maine’s growers and creatives ultimately called him back. “Maine has always been a place I wanted to return to. As beautiful as it is, I think it’s the people that attract everyone to the state. This is why I came back and why I wanted to start this restaurant. Chef Neil Zabriskie | Hailing from Southern California and influenced by the flavors of Mexico and the Southwest, Chef Neil Zabriskei honed his skills at culinary school and restaurants in Los Angeles. After 10 years in the kitchens of Spanish and Japanese establishments, he was pulled northward by the siren song of the ocean and the availability of fresh, local seafood. Relocating to Portland in 2018, Zabriskie immersed himself in the culinary landscape and community.
In 2022, Zabriskie opened Regards alongside wife and Sommelier Kimberely Lunch. The restaurant is a bridge between his culinary experiences, from L.A., to New York, to Portland. Tapping into his strong connections with local farmers, he prioritizes coastal New England produce and seafood to create a seafood-forward menu that feeds his nostalgia for the authentic Mexican flavors of his youth. Zabriskie was profiled as one of Star Chefs’ Rising Stars in 2023.

DETAILS: Tucked in the heart of Portland’s Old Port, The North Point feels both at the center of the action and, somehow, a quiet little retreat from the bustle. This cozy destination will be offering two different wine specials for you to indulge in all week! Each day, The North Point will highlight one red and one white varietal ($8 per pour, two pour limit per customer), and the chef will select the perfect cheese and meat plate to pair with each pour ($7 per plate). WEEKLONG: 2022 Montenidoli Canaiuolo Rosato x Gnocchi alla Toscana Pairing @ Solo Italiano
DETAILS: Make a reservation this week to enjoy a glass of the delicious 2022 Sono Montenidoli, Canaiuolo Rosato from San Gimignano, Tuscany with Chef Paolo Laboa's divine Gnocchi alla Toscana made with local rabbit liver sugo and Parmigiano-Reggiano. About the winemaker: Elisabetta Fagiuoli is a pivotal figure in Tuscan winemaking, making highly appreciated terroir-driven wines for nearly 50 years, on a mountain above the appellation of San Gimignano. In 1965 she fell in love with the Montenidoli estate which she was able to purchase with the help of some money from her grandmother. The estate was in total disrepair. She began working towards restoring the property to its former glory. Her debut vintage was 1971. Still today, she makes everything naturally, by hand.
Chef Paolo Laboa’s journey started in his mother's kitchen, where he learned the secrets of real Genovese cooking, the pinnacle of Northern Italian cuisine. Every ingredient Chef Paolo touches is fresh from the farm and sea to his kitchen to your table. Some of his favorite farms are Stonecipher Farm, Dandelion Springs Farm, Valley Farm, Olivia’s Garden for greens, vegetables, basil, and herbs, and Northspore for foraged mushrooms. Fresh fish is brought in each day through Upstream, Harbor Fish Market, or Browne Trading Co. Also sourcing other proteins like wild rabbit from Sumner Valley Farm and lamb and pork from Two Cove Farm, while dairy comes from a variety of these local farmers. “Cooking is what I love and I want each ingredient to sing. Simplicity is my goal. If there are five ingredients, I want you to taste all five of them.” Bread and pasta are all made in-house from scratch using traditional Genovese recipes. “It is very important–the food that you eat,” says Laboa.

DETAILS: In celebration of Portland Wine Week, Hunt & Alpine has taken a tip from the Spaniards and created "vermouth hour," a time to rest in the afternoon sun with a refreshing, light(ish) ABV beverage. Enjoy. wide range of vermouth-based cocktails all week from 4-6pm. Reservations not required, but it doesn’t hurt to reserve your seats!!
Not sure what Vermouth is? Its a category of fortified wine that’s flavored with various botanicals (roots, barks, flowers, seeds, herbs, and spices). Today it is usually served as an apéritif, with fashionable cafés in Spain and Italy, and ahem, Portland, Maine.
Portland Hunt + Alpine Club is a cocktail bar and Scandinavian-style restaurant in Portland's Old Port. It is a two-time James Beard Foundation semi-finalist for "Outstanding Cocktail Program" and was included as one of Thrillist's 2019 Top 19 Bars in the Country. Wine Enthusiast Magazine named Hunt one of their "50 Wine Restaurants We Love." They serve a late night Happy Hour from 11pm - 1am. And a full menu until 1am everyday.

Sommelier Victoria Barthelmes curates the wine program at Central Provisions and Tipo Restaurant. A graduate of The Culinary Institute of America, she focused the beginning of her career in New York City at Lincoln Ristorante under Chef Richard Capizzi and Johnathan Beno. While at Lincoln, Victoria was an integral part of the team that also produced the pastry program offered at the Metropolitan Opera, Lincoln Center, and elaborate wedding cakes for the Brooklyn Botanical Garden. Upon moving to Maine in 2015, she began purchasing wine as a General Manager for a cafe and market in Cape Elizabeth. When she joined the team at Tipo, she worked her way up to General Manager and eventually took over the wine director role for both of the Goulds’ restaurants. She earned her first-level degree with the Court of Master Sommeliers in 2023.

WEEKLONG: Daniel Chotard Sancerre Flight @ Broken Arrow
DETAILS: The Chotard family has been making wine for over 200 years, though Daniel Chotard very almost broke the chain, starting his career as a teacher and musician. Ultimately the family roots were too deep to be avoided and he, alongside his wife Brigitte took up the mantle to farm organically and produce exceptional Sancerre wines. He is known to organize elaborate music and wine celebrations - These are party wines, which means they are perfect for Broken Arrow's dimmed lights and loud music!

DETAILS: West of Lisbon lies Portugal's smallest wine appellation, Carcavelos. Despite these fortified dessert wines gaining significant renown in the 18th century, the arrival of phylloxera was a setback from which they never quite recovered. Today there is only one active producer of Carcavelos. Villa Oeiras, born of a partnership between Portugal's Ministry of Agriculture and the municipality of Oeiras, keeps the tradition alive.

Ryan Hickman, co-Owner of The Knotted Apron, brings creative spark and 20+ years experience of work in professional kitchens. After being summoned to the line as a young dishwasher, Ryan quickly made the rounds at various restaurants as a line cook before moving to Portland to train under Chef Larry Matthews Jr. of Back Bay Grill. Becoming the Sous Chef and learning the importance of scratch cooking and using quality local ingredients became the backbone of Ryan’s cooking. Years following, Chef Ryan worked multiple seasonal gigs in Lake Tahoe and then back to the east at Arrow’s restaurant in Ogunquit with Chef's Mark Gair and Clark Fraiser. In 2014 Chef Ryan helped open and helm the kitchen at Pine Point Grill in Scarborough bringing seasonal menus and expertise to an area not known for it’s culinary flair. When the restaurant sold in 2019, Chef Ryan ventured out on his own to find a home for his passion and quest to have simple food executed well. In 2020 Chef Ryan opened the doors to The Knotted Apron with his loving fiancé and co-founder Kate Harvey, where he continues to make his dreams come true one plate at a time.

Jessica Williams is a seasoned beverage professional with experience ranging from steakhouse to boutique wine bar. Executive Chef Matt Ginn
Both in his personal and professional life, Matt strives to create food that is honest and speaks for itself with outstanding ingredients that require minimal intervention. Matt’s culinary philosophy is guided by the seasons and the region, which has allowed him to cultivate long-standing, meaningful relationships with local Maine farmers. This shines through on Evo’s menu, which he thoughtfully curates and rotates daily. A woman of incredible stature – even though she’s only 4’ 8” – Jacqueline shared her love of life and food with her granddaughter and granddaughter’s husband, Michelle, and Steve Corry. Born and raised in Andresy, just outside of Paris, Jacqueline was an enthusiastic and passionate cook. Using market-fresh ingredients, she created dishes without pretense that would astound even the most discriminating palate. This is exactly the type of food and atmosphere you’ll enjoy with each visit to Petite Jacqueline.
